- 2 ½ cups cooked shredded chicken (rotisserie or grilled)
- 1 large ripe avocado
- 1 clove garlic minced
- 2 ½ tablespoons mayonnaise or light mayo
- 1 tablespoon Dijon mustard
- 1 tablespoon agave nectar or honey
- 1 tablespoon freshly chopped tarragon or 1 tsp dried
- 1 ½ tablespoons freshly chopped dill or 1 ½ tsp dried
- ½ tablespoon fresh lemon juice
- ½ teaspoon salt
- ⅛ teaspoon black pepper
- ¼ cup chopped walnuts
- Bibb or butter lettuce leaves for wrapping
Place shredded chicken in a large bowl.
In a blender or food processor, puree avocado, garlic, mayonnaise, mustard, agave nectar, tarragon, dill, lemon juice, salt, and pepper until smooth. Add ½ to 1 tablespoon water to reach a creamy dressing consistency.
Pour the dressing over chicken, stir to combine evenly, add walnuts, and refrigerate for at least 1 hour for best flavor.
Spoon about ¼ cup of chicken salad onto each lettuce leaf, wrap, and serve
