Ingredients
  

  • 2 ½ cups cooked shredded chicken (rotisserie or grilled)
  • 1 large ripe avocado
  • 1 clove garlic minced
  • 2 ½ tablespoons mayonnaise or light mayo
  • 1 tablespoon Dijon mustard
  • 1 tablespoon agave nectar or honey
  • 1 tablespoon freshly chopped tarragon or 1 tsp dried
  • 1 ½ tablespoons freshly chopped dill or 1 ½ tsp dried
  • ½ tablespoon fresh lemon juice
  • ½ teaspoon salt
  • teaspoon black pepper
  • ¼ cup chopped walnuts
  • Bibb or butter lettuce leaves for wrapping

Instructions
 

  • Place shredded chicken in a large bowl.
  • In a blender or food processor, puree avocado, garlic, mayonnaise, mustard, agave nectar, tarragon, dill, lemon juice, salt, and pepper until smooth. Add ½ to 1 tablespoon water to reach a creamy dressing consistency.
  • Pour the dressing over chicken, stir to combine evenly, add walnuts, and refrigerate for at least 1 hour for best flavor.
  • Spoon about ¼ cup of chicken salad onto each lettuce leaf, wrap, and serve

Notes

  • Use rotisserie chicken for convenience or cook and shred your own chicken breast.
  • Adjust herbs and seasoning to your taste.
  • Optional: top with minced red bell pepper or carrot for extra color and crunch.
  • Lettuce wraps can be served as a light main course or appetizer.
