Mac and cheese is a childhood favorite. However, that doesn’t mean adults can’t enjoy a more refined version. In fact, this adult mac and cheese recipe brings together gourmet cheeses, rich flavors, and a crispy topping for the ultimate indulgence.

Ingredients
  

For the Cheese Sauce:

  • 2 tablespoons unsalted butter​
  • 2 tablespoons all-purpose flour​
  • 2 cups whole milk​
  • 1 cup heavy cream​
  • 1 teaspoon Dijon mustard​
  • ½ teaspoon smoked paprika​
  • ½ teaspoon garlic powder​
  • Salt and black pepper to taste

Cheese Blend:

  • cups sharp cheddar cheese shredded​
  • 1 cup Gruyère cheese shredded​
  • ½ cup smoked Gouda shredded

Pasta & Toppings:

  • 12 ounces cavatappi or elbow macaroni​
  • ½ cup crispy bacon crumbled (optional)​
  • ½ cup panko breadcrumbs​
  • 2 tablespoons Parmesan cheese grated​
  • 1 tablespoon truffle oil optional​
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Cook the Pasta: Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente according to package instructions. Drain and set aside.​
  • Prepare the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1-2 minutes until the mixture is golden and bubbly. Gradually add the milk and heavy cream, whisking continuously to prevent lumps. Stir in the Dijon mustard, smoked paprika, garlic powder, salt, and pepper. Cook until the sauce thickens, about 5 minutes.​
  • Incorporate the Cheese: Reduce the heat to low. Add the shredded cheddar, Gruyère, and smoked Gouda to the sauce, stirring until all the cheese has melted and the sauce is smooth.​
  • Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce, stirring to ensure all the pasta is evenly coated. If using, mix in the crumbled bacon at this stage.​
  • Prepare for Baking: Preheat your oven to 375°F (190°C). Transfer the mac and cheese mixture to a greased baking dish.​
  • Add Toppings: In a small bowl, combine the panko breadcrumbs and grated Parmesan cheese. Sprinkle this mixture evenly over the mac and cheese. Drizzle with truffle oil if desired.​
  • Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the topping is golden brown and crispy.​
  • Serve: Remove from the oven and let it cool slightly. Garnish with chopped fresh parsley before serving.

Notes

  • Cheese Selection: You can experiment with other gourmet cheeses, such as Fontina or Asiago, to suit your taste preferences.​
  • Add-ins: For additional depth, consider incorporating caramelized onions, sautéed mushrooms, or lobster for a luxurious twist.​
  • Storage: Any leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently to maintain the creamy texture.
