Ingredients
  

  • 1 cup mashed ripe bananas
  • 1 egg
  • ¼ cup honey or maple syrup
  • ¼ cup melted coconut oil or butter
  • 1 tsp vanilla extract
  • ¾ cup whole wheat flour
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • Pinch of salt
  • ¼ cup mini chocolate chips optional

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a mini muffin tin.
  • In a bowl, whisk together mashed bananas, egg, honey, oil, and vanilla.
  • Add flour, baking soda, cinnamon, and salt; stir until just combined.
  • Fold in mini chocolate chips if using.
  • Spoon batter into mini muffin cups, filling each 3/4 full.
  • Bake for 12–15 minutes or until a toothpick comes out clean.
  • Cool slightly before removing from the pan.

Notes

  • Overripe bananas make the bites sweeter and softer.
  • You can add chopped nuts for extra crunch.
  • Store in an airtight container for up to 3 days or freeze for later.
