Ingredients
  

  • 2 cups cooked Japanese short-grain rice preferably day-old
  • 2 tablespoons vegetable oil or sesame oil
  • 2 eggs beaten
  • 1 small onion finely chopped
  • 1 clove garlic minced
  • ½ cup mixed vegetables peas, carrots, corn
  • 2 green onions chopped
  • 1 tablespoon soy sauce
  • Salt and pepper to taste

Instructions
 

  • Heat 1 tablespoon oil in a skillet, scramble eggs, then set aside
  • Add remaining oil, sauté onions and garlic until fragrant
  • Stir in mixed vegetables, cook until tender
  • Add cooked rice, breaking up clumps, and mix well
  • Return scrambled eggs to the pan, stir to combine
  • Pour in soy sauce, season with salt and pepper, stir-fry until heated through
  • Garnish with chopped green onions before serving

Notes

  • Use day-old rice to prevent mushiness
  • Add protein like chicken, shrimp, or tofu for variation
  • Adjust soy sauce and seasoning to taste
