Ingredients
  

  • cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • ¾ cup cold unsalted butter cubed
  • 1 cup cold buttermilk
  • 4 tbsp melted butter for topping

Instructions
 

  • Preheat oven to 450°F (230°C) and grease a cast-iron skillet or baking dish.
  • In a large bowl, whisk together flour, baking powder, salt, and sugar.
  • Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
  • Pour in cold buttermilk and stir just until combined—do not overmix.
  • Turn dough out onto a floured surface and gently pat it into a 1-inch thick rectangle.
  • Fold dough over itself 2–3 times, then gently pat down again to 1-inch thickness.
  • Cut biscuits with a floured 2½-inch cutter and place in prepared pan.
  • Brush tops with melted butter.
  • Bake for 20–25 minutes, until golden brown.
  • Brush with more melted butter before serving.

Notes

Use frozen grated butter for ultra-flaky layers. Don’t overmix the dough—handle it as little as possible. Serve warm with honey, jam, or sausage gravy.
