These Blueberry Baked Oats are warm, fluffy, and naturally sweetened, making them a perfect nutritious breakfast. Easy to prep ahead and packed with wholesome ingredients. Great for meal prep or cozy morning treats!

Ingredients
  

  • 1 cup rolled oats
  • ½ tsp baking powder
  • ¼ tsp cinnamon
  • Pinch of salt
  • 1 cup milk of choice
  • 1 ripe banana mashed
  • 1 egg
  • 2 tbsp maple syrup or honey
  • ½ tsp vanilla extract
  • ½ cup fresh or frozen blueberries
  • 1 tbsp coconut oil or butter for greasing

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a baking dish.
  • In a bowl, mix oats, baking powder, cinnamon, and salt.
  • In another bowl, whisk milk, mashed banana, egg, maple syrup, and vanilla.
  • Combine wet and dry ingredients, then fold in blueberries.
  • Pour mixture into greased baking dish.
  • Bake for 30 minutes or until golden and set.
  • Let cool slightly before serving

Notes

  • Use frozen blueberries without thawing to avoid excess moisture.
  • Add a scoop of protein powder for extra nutrition.
  • Top with yogurt or nut butter for a hearty finish.
