- 1 cup rolled oats
- ½ tsp baking powder
- ¼ tsp cinnamon
- Pinch of salt
- 1 cup milk of choice
- 1 ripe banana mashed
- 1 egg
- 2 tbsp maple syrup or honey
- ½ tsp vanilla extract
- ½ cup fresh or frozen blueberries
- 1 tbsp coconut oil or butter for greasing
Preheat oven to 350°F (175°C) and grease a baking dish.
In a bowl, mix oats, baking powder, cinnamon, and salt.
In another bowl, whisk milk, mashed banana, egg, maple syrup, and vanilla.
Combine wet and dry ingredients, then fold in blueberries.
Pour mixture into greased baking dish.
Bake for 30 minutes or until golden and set.
Let cool slightly before serving
- Use frozen blueberries without thawing to avoid excess moisture.
- Add a scoop of protein powder for extra nutrition.
- Top with yogurt or nut butter for a hearty finish.
