Broccoli Cheese Baked Potatoes: Easy, Cheesy Recipe

Ingredients
  

  • 4 large russet potatoes
  • 1 tbsp olive oil
  • 1 ½ cups broccoli florets chopped
  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Scrub potatoes, prick with a fork, and rub with olive oil.
  • Bake potatoes directly on the rack for 45–50 minutes until tender.
  • Steam or microwave broccoli until just tender, about 3–4 minutes.
  • In a saucepan, melt butter, whisk in flour, and cook 1 minute.
  • Slowly whisk in milk and stir until thickened.
  • Add cheese, stir until melted and smooth.
  • Stir in broccoli, season with salt and pepper.
  • Slice open baked potatoes and fluff the insides with a fork.
  • Top with broccoli cheese mixture and serve warm.

Notes

Use sharp cheddar for bold flavor or try a cheese blend.
For extra protein, mix in cooked chicken or chickpeas.
Can be prepped ahead and reheated for easy lunches.
