Ingredients
  

  • 3 large boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 cups cooked white rice or instant rice prepared
  • 3 cups broccoli florets fresh or thawed frozen
  • 1 10.5-ounce can cream of chicken soup
  • 1 10.5-ounce can broccoli cheese soup (optional for extra cheesiness)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese plus extra for topping
  • ¼ cup unsalted butter melted
  • 30 butter-flavored crackers crushed (like Ritz)
  • Salt and black pepper to taste

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a large bowl, combine cooked rice, chicken pieces, broccoli florets, cream of chicken soup, broccoli cheese soup (if using), sour cream, and cheddar cheese. Season with salt and pepper and mix well.
  • Transfer mixture to the prepared baking dish and spread evenly.
  • In a small bowl, mix melted butter with crushed crackers; sprinkle evenly over the casserole.
  • Bake covered with foil for 30 minutes. Remove foil and bake an additional 10-15 minutes uncovered until bubbly and golden on top.
  • Let cool for 5-10 minutes before serving.

Notes

  • Use rotisserie chicken for a time-saving shortcut.
  • Fresh broccoli provides better texture, but frozen works fine if thawed and drained.
  • Can be assembled ahead and refrigerated for up to 2 days before baking.
  • Add garlic powder or onion powder to the mixture for more flavor.
  • Substitute half the sour cream with cream cheese for a richer sauce.
