- 1 cup unsalted butter
- 1 cup granulated sugar
- ¼ cup water
- ¼ tsp salt
- 1 tsp vanilla extract
- 2 cups roasted salted cashews chopped
- 1 cup semi-sweet chocolate chips
Line a baking sheet with parchment paper.
In a saucepan, melt butter over medium heat.
Add sugar, water, and salt; stir until dissolved.
Cook without stirring until mixture reaches 300°F (hard crack stage).
Remove from heat; stir in vanilla extract and half the cashews.
Immediately pour mixture onto prepared baking sheet and spread evenly.
Sprinkle chocolate chips over hot toffee; let melt and spread evenly.
Sprinkle remaining cashews on top and press lightly.
Let cool completely, then break into pieces.

- Store in an airtight container for up to 2 weeks.
- Can be made with almonds or pecans instead of cashews.
