Ingredients
  

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • ¼ cup water
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 2 cups roasted salted cashews chopped
  • 1 cup semi-sweet chocolate chips

Instructions
 

  • Line a baking sheet with parchment paper.
  • In a saucepan, melt butter over medium heat.
  • Add sugar, water, and salt; stir until dissolved.
  • Cook without stirring until mixture reaches 300°F (hard crack stage).
  • Remove from heat; stir in vanilla extract and half the cashews.
  • Immediately pour mixture onto prepared baking sheet and spread evenly.
  • Sprinkle chocolate chips over hot toffee; let melt and spread evenly.
  • Sprinkle remaining cashews on top and press lightly.
  • Let cool completely, then break into pieces.

Notes

  • Use a candy thermometer for best results.
  • Store in an airtight container for up to 2 weeks.
  • Can be made with almonds or pecans instead of cashews.
