Ingredients
  

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup vegetable oil
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups grated carrots
  • ½ cup crushed pineapple drained
  • ½ cup chopped walnuts optional
  • 4 oz cream cheese softened (for frosting)
  • ¼ cup butter softened (for frosting)
  • 1 cup powdered sugar for frosting
  • ½ tsp vanilla extract for frosting

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9x9-inch pan.
  • In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In another bowl, beat oil, brown sugar, and granulated sugar until well combined.
  • Add eggs and vanilla, mixing until smooth.
  • Stir in grated carrots, pineapple, and walnuts.
  • Fold in dry ingredients until just combined.
  • Spread batter evenly in the prepared pan.
  • Bake for 25–30 minutes or until a toothpick inserted comes out clean.
  • Let cool completely before frosting.
  • For frosting, beat cream cheese and butter until creamy.
  • Add powdered sugar and vanilla, mixing until fluffy.
  • Spread frosting over cooled bars and cut into squares.

Notes

  • Store in the refrigerator for up to 5 days.
  • You can add raisins for extra sweetness.
  • Toast walnuts for a richer flavor.
