- 1 cup shredded carrots
- 1 cup rolled oats
- ½ cup almond butter or peanut butter
- ⅓ cup honey or maple syrup
- ⅓ cup shredded coconut
- ¼ cup ground flaxseed
- ¼ cup raisins or chopped dates
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 1 tsp vanilla extract
- Pinch of salt
In a large bowl, mix shredded carrots, oats, coconut, flaxseed, raisins, and spices.
Add almond butter, honey, and vanilla; stir until fully combined.
Chill mixture for 10 minutes if too sticky.
Roll into small bite-sized balls using your hands.
Place on a lined tray and refrigerate for at least 30 minutes before serving.
