Ingredients
  

  • 1 cup shredded carrots
  • 1 cup rolled oats
  • ½ cup almond butter or peanut butter
  • cup honey or maple syrup
  • cup shredded coconut
  • ¼ cup ground flaxseed
  • ¼ cup raisins or chopped dates
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • In a large bowl, mix shredded carrots, oats, coconut, flaxseed, raisins, and spices.
  • Add almond butter, honey, and vanilla; stir until fully combined.
  • Chill mixture for 10 minutes if too sticky.
  • Roll into small bite-sized balls using your hands.
  • Place on a lined tray and refrigerate for at least 30 minutes before serving.

Notes

  • Store in an airtight container in the fridge for up to 1 week.
  • Freeze for longer storage (up to 2 months).
  • Add protein powder for extra nutrition.
