Tender cooked cabbage is combined with creamy Velveeta cheese, lightly sweetened and seasoned, then topped with a buttery, crunchy cracker crust. This easy casserole is ready in under an hour and can be customized with your favorite cheese and seasonings.

Ingredients
  

  • 6 tablespoons salted butter divided
  • 12 cups chopped cabbage about 1 large head, cut into 1-inch pieces
  • 2 tablespoons granulated sugar
  • 1 teaspoon seasoning salt or salt and black pepper to taste
  • ¼ to ½ teaspoon crushed red pepper flakes optional
  • 6 ounces Velveeta cheese cubed
  • 1 sleeve buttery round crackers crushed (about 30 crackers)

Instructions
 

  • Preheat oven to 350°F (175°C). Butter or spray a 9×13-inch (or 3.5-4 quart) baking dish and set aside.
  • Slice cabbage into 1-inch pieces.
  • In a large skillet, melt 2 tablespoons of butter over medium heat. Add cabbage and cook, stirring occasionally, until tender, about 10-12 minutes.
  • Stir in Velveeta cheese cubes, sugar, seasoning salt, and crushed red pepper flakes. Fold gently until cheese melts and mixture is well combined.
  • Transfer the cabbage mixture to the prepared baking dish.
  • Melt the remaining 4 tablespoons butter in a small bowl; combine with crushed crackers. Sprinkle evenly over the casserole.
  • Bake uncovered for 20-25 minutes until the topping is golden brown and casserole is bubbling.
  • Let cool a few minutes before serving. Garnish with chopped parsley or green onions if desired.

Notes

  • Swap Velveeta for shredded cheddar, Monterey Jack, or a cheese blend for a more natural cheese flavor.
  • Use panko breadcrumbs or crushed cornflakes instead of crackers for a different topping texture.
  • Add cooked bacon, ham, or sausage into the cabbage mixture for a heartier dish.
  • Increase crushed red pepper flakes or add cayenne for extra spice.
  • This casserole pairs well with roasted meats or as a vegetarian main course side.
