Ingredients
  

  • 1 ½ pounds seasoned cooked and chopped chicken
  • 1 ½ cup sour cream light or regular
  • 2 10.75 oz cans condensed cream of chicken soup
  • 2 cups shredded Colby jack cheese
  • 1 cup shredded cheddar cheese
  • 8-10 ounces pasta
  • ¼ cup butter
  • 1 ½ cup crushed butter crackers

Instructions
 

  • Preheat oven to 350℉.
  • Cook pasta according to package instructions, then drain.
  • In a large bowl, combine sour cream, cream of chicken soup, cheeses, and chicken; fold until well mixed.
  • Add cooked pasta; fold again to incorporate.
  • Grease a 13"x9" baking dish and spread the mixture evenly.
  • Mix melted butter and crushed crackers until crumbly; sprinkle over the pasta mixture.
  • Bake for 28-30 minutes until bubbly and crackers are golden.

Notes

  • Use any pasta shape; rotisserie chicken works well for ease.
  • You can make it ahead by assembling and refrigerating before baking.
  • For a richer flavor, add garlic or chopped onions sautéed with the chicken.
  • Adjust cheese types or quantities to taste.
