- 2 large onions cut into thick rings
- 8 oz mozzarella cheese cut into strips
- ½ cup all-purpose flour
- 2 large eggs beaten
- 1 cup breadcrumbs panko for extra crunch
- ½ tsp garlic powder
- ½ tsp paprika
- Salt and pepper to taste
- Oil for frying
Separate onion rings and pair similar sizes to form cheese “sandwiches.”
Place mozzarella strips between two rings and press to seal.
Freeze rings for 30 minutes to hold shape.
Prepare breading stations: flour, beaten eggs, and seasoned breadcrumbs.
Dip frozen rings in flour, then egg, then breadcrumbs.
Heat oil to 350°F (175°C) in a deep skillet or fryer.
Fry rings in batches for 2–3 minutes per side until golden and crispy.
Drain on paper towels and serve hot with marinara or ranch dip.
