Ingredients
  

  • 2 large onions cut into thick rings
  • 8 oz mozzarella cheese cut into strips
  • ½ cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs panko for extra crunch
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • Oil for frying

Instructions
 

  • Separate onion rings and pair similar sizes to form cheese “sandwiches.”
  • Place mozzarella strips between two rings and press to seal.
  • Freeze rings for 30 minutes to hold shape.
  • Prepare breading stations: flour, beaten eggs, and seasoned breadcrumbs.
  • Dip frozen rings in flour, then egg, then breadcrumbs.
  • Heat oil to 350°F (175°C) in a deep skillet or fryer.
  • Fry rings in batches for 2–3 minutes per side until golden and crispy.
  • Drain on paper towels and serve hot with marinara or ranch dip.

Notes

  • Freezing helps the cheese stay inside during frying.
  • Add cayenne or chili flakes for a spicy version.
  • Air fryer option: cook at 390°F for 8–10 mins, flipping halfway.
  • Best served immediately while gooey and hot!
