- 2 lbs baby potatoes quartered
- 12 oz smoked sausage sliced
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- 1 packet ranch seasoning mix
- 2 tbsp olive oil
- 2 green onions chopped (optional)
- Salt and pepper to taste
Preheat oven to 400°F (200°C) and grease a baking dish.
In a large bowl, toss potatoes with olive oil, ranch seasoning, salt, and pepper.
Spread potatoes in baking dish and bake for 25 minutes.
Remove, add sliced sausage on top, and bake for another 10 minutes.
Sprinkle cheddar cheese and return to oven for 5 minutes or until melted.
Remove, drizzle with sour cream, and garnish with green onions.
Serve warm and enjoy!
- You can use turkey or chicken sausage for a lighter version.
- Add bell peppers or broccoli for extra veggies.
- Leftovers keep well in the fridge for up to 3 days.
