Ingredients
  

  • 6 part-baked bread rolls | 1 cup 100g mature cheddar, grated | 1 cup (100g) mozzarella, grated | 2 tbsp heavy cream | 1 packed cup (40g) baby spinach, roughly torn | 8 sun-dried tomatoes, chopped | 1/4 tsp salt | 1/4 tsp pepper | 3 sprigs parsley, chopped

Instructions
 

  • Preheat oven to 400°F (200°C). Cut an oblong hole in each roll and scoop out most of the bread. Grate some reserved bread for breadcrumbs. Mix cheddar, mozzarella, cream, spinach, sun-dried tomatoes, salt, and pepper. Fill bread cavities with mixture, top with breadcrumbs. Bake 10 minutes until golden. Sprinkle with parsley to serve

Notes

Use gluten-free or vegetarian rolls and cheeses as needed. Save any leftover scooped bread for homemade breadcrumbs. Swap or add cheeses for more stretch and flavor.
