Ingredients
  

  • 1 lb ground beef
  • 1 10 oz can Rotel diced tomatoes and green chiles (undrained)
  • 1 32 oz bag frozen tater tots
  • 1 16 oz block Velveeta cheese, cubed (or substitute with shredded cheddar)
  • 1 small onion diced
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder optional for extra spice
  • Salt to taste
  • 2 cups shredded cheddar or Colby Jack cheese for topping

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a skillet over medium heat, brown ground beef with diced onions until fully cooked; drain excess fat.
  • Stir in Rotel, garlic powder, black pepper, chili powder, and salt; cook for 5 minutes until flavors meld.
  • Add cubed Velveeta cheese to the beef mixture and stir until melted and creamy.
  • Spread the beef and cheese mixture evenly in a greased 9x13-inch baking dish.
  • Top with frozen tater tots in an even layer, then sprinkle shredded cheddar or Colby Jack cheese on top.
  • Bake uncovered for 25-30 minutes or until tater tots are golden brown and cheese is bubbly.
  • Let rest 5 minutes before serving.

Notes

  • Substitute Velveeta with cream cheese or shredded cheese for a different texture.
  • Add corn, black beans, or jalapeños for extra flavor and texture.
  • Use taco seasoning instead of chili powder for a more robust flavor.
  • Assemble ahead and refrigerate; add extra baking time if baking from cold.
