Graham Cracker Crust:
- 1½ cups graham cracker crumbs
- 6 tablespoons unsalted butter melted
Filling:
- 1 8-ounce package cream cheese, softened
- ½ cup granulated sugar
- 2 cups heavy whipping cream
- 3 tablespoons granulated sugar
- ½ teaspoon vanilla extract
- 1 21-ounce can cherry pie filling
Prepare the Crust:
In a medium bowl, combine the graham cracker crumbs and melted butter until well mixed.
Press the mixture firmly into the bottom of a 9x9-inch baking dish to form an even layer.
Set aside 2 tablespoons of the crumb mixture for topping.
Make the Filling:
In a large bowl, beat the softened cream cheese and ½ cup granulated sugar until smooth and creamy.
In a separate bowl, whip the heavy whipping cream, 3 tablespoons sugar, and vanilla extract until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until fully combined.
Assemble the Dessert:
Spread half of the cream cheese mixture evenly over the prepared crust.
Evenly spread the cherry pie filling over the cream cheese layer.
Top with the remaining cream cheese mixture, spreading it evenly.
Sprinkle the reserved graham cracker crumbs over the top as a garnish.
Chill and Serve:
Cover the dish and refrigerate for at least 2 hours, or overnight, to allow the dessert to set properly.
Once set, slice into squares and serve chilled.
