Ingredients
  

  • Large shrimp peeled, deveined – 1 lb
  • Olive oil – 2 tbsp
  • Chipotle peppers in adobo minced – 1–2 tbsp (adjust to taste)
  • Garlic minced – 2 cloves
  • Lime juice – 2 tbsp
  • Honey – 1 tsp
  • Salt – 1/2 tsp
  • Black pepper – 1/4 tsp
  • Cooked rice – 3 cups
  • Black beans drained, rinsed – 1 cup
  • Corn kernels – 1 cup
  • Cherry tomatoes halved – 1 cup
  • Avocado sliced – 1 large
  • Fresh cilantro chopped – 2 tbsp

Instructions
 

  • In a bowl, whisk olive oil, chipotle peppers, garlic, lime juice, honey, salt, and pepper.
  • Add shrimp and toss to coat; marinate 10–15 minutes.
  • Heat a skillet over medium-high heat; cook shrimp 2–3 minutes per side until pink and opaque.
  • Divide rice among bowls.
  • Top with shrimp, black beans, corn, tomatoes, avocado, and cilantro.
  • Serve with extra lime wedges if desired.

Notes

For more heat, add extra chipotle peppers or a pinch of cayenne. Brown rice or quinoa can be used for a healthier base. Great with a drizzle of chipotle crema.
