- Large shrimp peeled, deveined – 1 lb
- Olive oil – 2 tbsp
- Chipotle peppers in adobo minced – 1–2 tbsp (adjust to taste)
- Garlic minced – 2 cloves
- Lime juice – 2 tbsp
- Honey – 1 tsp
- Salt – 1/2 tsp
- Black pepper – 1/4 tsp
- Cooked rice – 3 cups
- Black beans drained, rinsed – 1 cup
- Corn kernels – 1 cup
- Cherry tomatoes halved – 1 cup
- Avocado sliced – 1 large
- Fresh cilantro chopped – 2 tbsp
In a bowl, whisk olive oil, chipotle peppers, garlic, lime juice, honey, salt, and pepper.
Add shrimp and toss to coat; marinate 10–15 minutes.
Heat a skillet over medium-high heat; cook shrimp 2–3 minutes per side until pink and opaque.
Divide rice among bowls.
Top with shrimp, black beans, corn, tomatoes, avocado, and cilantro.
Serve with extra lime wedges if desired.
For more heat, add extra chipotle peppers or a pinch of cayenne. Brown rice or quinoa can be used for a healthier base. Great with a drizzle of chipotle crema.
