- 2 cups all-purpose flour
- 1 ½ tsp cinnamon
- ½ tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter softened
- ⅔ cup granulated sugar
- ⅓ cup brown sugar
- 2 large eggs
- ½ cup plain yogurt or sour cream
- 1 tsp vanilla extract
- 1 ½ cups peeled and chopped apples e.g. Fuji or Honeycrisp
- Optional: 1/2 cup chopped walnuts or pecans
Preheat oven to 350°F (175°C); grease a 9x5" loaf pan.
In a bowl, mix flour, cinnamon, baking soda, baking powder, and salt.
In another bowl, beat butter and sugars until creamy.
Add eggs, vanilla, and yogurt; mix until smooth.
Gradually add dry ingredients to wet mixture until combined.
Fold in apples and nuts (if using).
Pour batter into pan and smooth the top.
Bake for 50–60 minutes, until a toothpick comes out clean.
Cool in pan for 10 mins, then transfer to wire rack.
- Use tart apples for more flavor contrast.
- Add a cinnamon-sugar topping before baking for extra crunch.
- Bread tastes even better the next day!
- Freezes well—wrap tightly and store up to 2 months.
