Ingredients
  

  • 2 cups all-purpose flour
  • 1 ½ tsp cinnamon
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter softened
  • cup granulated sugar
  • cup brown sugar
  • 2 large eggs
  • ½ cup plain yogurt or sour cream
  • 1 tsp vanilla extract
  • 1 ½ cups peeled and chopped apples e.g. Fuji or Honeycrisp
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions
 

  • Preheat oven to 350°F (175°C); grease a 9x5" loaf pan.
  • In a bowl, mix flour, cinnamon, baking soda, baking powder, and salt.
  • In another bowl, beat butter and sugars until creamy.
  • Add eggs, vanilla, and yogurt; mix until smooth.
  • Gradually add dry ingredients to wet mixture until combined.
  • Fold in apples and nuts (if using).
  • Pour batter into pan and smooth the top.
  • Bake for 50–60 minutes, until a toothpick comes out clean.
  • Cool in pan for 10 mins, then transfer to wire rack.

Notes

  • Use tart apples for more flavor contrast.
  • Add a cinnamon-sugar topping before baking for extra crunch.
  • Bread tastes even better the next day!
  • Freezes well—wrap tightly and store up to 2 months.
