Cinnamon Roll Protein Crepes Recipe

These soft, high-protein crepes are the perfect sweet breakfast or post-workout treat. Packed with cinnamon roll flavor and a drizzle of creamy icing, they’re healthy, satisfying, and easy to make. Great for meal prep or a weekend brunch favorite.

Ingredients
  

  • 2 large eggs
  • ½ scoop vanilla protein powder
  • ¼ cup unsweetened almond milk
  • 2 tbsp oat flour
  • ½ tsp ground cinnamon
  • ½ tsp vanilla extract
  • 1 tsp sweetener of choice
  • ¼ tsp baking powder
  • Pinch of salt
  • Coconut oil or cooking spray for greasing
  • Cinnamon Swirl Filling:
  • 1 tbsp Greek yogurt
  • ½ tsp cinnamon
  • ½ tsp maple syrup
  • Icing Drizzle:
  • 2 tbsp Greek yogurt
  • 1 tsp milk
  • ½ tsp vanilla extract
  • 1 tsp powdered sweetener

Instructions
 

  • In a bowl, whisk eggs, protein powder, almond milk, oat flour, cinnamon, vanilla, sweetener, baking powder, and salt until smooth.
  • Heat a nonstick skillet over medium and lightly grease with coconut oil.
  • Pour a small amount of batter and swirl to spread thinly.
  • Cook for 1–2 minutes per side or until lightly golden.
  • In a small bowl, mix filling ingredients and spread inside each crepe.
  • Roll up the crepes and drizzle with icing mixture.
  • Serve warm and enjoy!

Notes

  • You can swap oat flour with almond or coconut flour if desired.
  • Add chopped nuts or banana slices for extra texture.
  • Store leftovers in the fridge and reheat lightly before serving.
