Cinnamon Roll Protein Crepes Recipe

These soft, high-protein crepes are the perfect sweet breakfast or post-workout treat. Packed with cinnamon roll flavor and a drizzle of creamy icing, they’re healthy, satisfying, and easy to make. Great for meal prep or a weekend brunch favorite.

- 2 large eggs
- ½ scoop vanilla protein powder
- ¼ cup unsweetened almond milk
- 2 tbsp oat flour
- ½ tsp ground cinnamon
- ½ tsp vanilla extract
- 1 tsp sweetener of choice
- ¼ tsp baking powder
- Pinch of salt
- Coconut oil or cooking spray for greasing
- Cinnamon Swirl Filling:
- 1 tbsp Greek yogurt
- ½ tsp cinnamon
- ½ tsp maple syrup
- Icing Drizzle:
- 2 tbsp Greek yogurt
- 1 tsp milk
- ½ tsp vanilla extract
- 1 tsp powdered sweetener
In a bowl, whisk eggs, protein powder, almond milk, oat flour, cinnamon, vanilla, sweetener, baking powder, and salt until smooth.
Heat a nonstick skillet over medium and lightly grease with coconut oil.
Pour a small amount of batter and swirl to spread thinly.
Cook for 1–2 minutes per side or until lightly golden.
In a small bowl, mix filling ingredients and spread inside each crepe.
Roll up the crepes and drizzle with icing mixture.
Serve warm and enjoy!
- You can swap oat flour with almond or coconut flour if desired.
- Add chopped nuts or banana slices for extra texture.
- Store leftovers in the fridge and reheat lightly before serving.
