- 1 pound ground beef 1 small onion (chopped), 2 garlic cloves (minced), 1 (10.5-ounce) can condensed cream of mushroom soup, 1/2 cup sour cream, 1 (15-ounce) can whole kernel corn (drained), 2 cups shredded cheddar cheese, 1 (32-ounce) bag frozen tater tots, salt and pepper to taste, 2 tablespoons chopped green onions (optional).
Preheat oven to 375°F (190°C). In a skillet, cook beef, onion, and garlic until beef is browned; drain fat. Stir in soup, sour cream, corn, salt, and pepper. Spread beef mixture in a greased 9x13-inch baking dish. Top with 1 cup cheese. Arrange tater tots evenly on top. Sprinkle with remaining cheese. Bake 35min until tots are golden and casserole is bubbly. Garnish with green onions if desired.
Swap ground turkey or sausage for beef if preferred. For extra flavor, add chopped jalapeños or bacon bits. Use cream of chicken soup as an alternative. Leftovers reheat well for lunches.
