Ingredients
  

  • 1 cup granulated sugar
  • 6 large eggs
  • 1 can 14 oz sweetened condensed milk
  • 1 can 12 oz evaporated milk
  • 1 tbsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a saucepan over medium heat, melt sugar until golden, swirling gently—do not stir.
  • Quickly pour caramel into a 9-inch round baking dish, tilting to coat bottom evenly.
  • In a blender, combine eggs, condensed milk, evaporated milk, and vanilla; blend until smooth.
  • Pour mixture over set caramel.
  • Place baking dish in a larger pan, add hot water halfway up the sides (water bath).
  • Bake 50 minutes or until set but slightly jiggly in center.
  • Cool, then refrigerate for at least 4 hours or overnight.
  • To serve, run a knife around edges, invert onto a plate, and let caramel sauce coat the top.

Notes

  • For extra creaminess, strain the custard mixture before pouring it over caramel.
