- Spaghetti or fettuccine – 12 oz
- Olive oil – 1 tbsp
- Garlic minced – 3 cloves
- Chili oil – 3 tbsp adjust to taste
- Heavy cream – 1 cup
- Parmesan cheese grated – 1/2 cup
- Salt – 1/2 tsp
- Black pepper – 1/4 tsp
- Fresh parsley chopped – 2 tbsp
- Pasta water – 1/2 cup reserved from cooking
Cook pasta according to package directions; reserve 1/2 cup pasta water.
In a skillet, heat olive oil over medium heat; sauté garlic until fragrant.
Add chili oil and stir for 30 seconds.
Pour in heavy cream and bring to a gentle simmer.
Stir in parmesan, salt, and black pepper until smooth.
Toss cooked pasta with the sauce, adding reserved pasta water as needed for desired consistency.
Garnish with parsley and extra chili oil before serving.
Adjust chili oil for more or less heat. Add sautéed shrimp, chicken, or roasted veggies for a complete meal. For a vegan option, use coconut cream and plant-based parmesan.
