Ingredients
  

  • Spaghetti or fettuccine – 12 oz
  • Olive oil – 1 tbsp
  • Garlic minced – 3 cloves
  • Chili oil – 3 tbsp adjust to taste
  • Heavy cream – 1 cup
  • Parmesan cheese grated – 1/2 cup
  • Salt – 1/2 tsp
  • Black pepper – 1/4 tsp
  • Fresh parsley chopped – 2 tbsp
  • Pasta water – 1/2 cup reserved from cooking

Instructions
 

  • Cook pasta according to package directions; reserve 1/2 cup pasta water.
  • In a skillet, heat olive oil over medium heat; sauté garlic until fragrant.
  • Add chili oil and stir for 30 seconds.
  • Pour in heavy cream and bring to a gentle simmer.
  • Stir in parmesan, salt, and black pepper until smooth.
  • Toss cooked pasta with the sauce, adding reserved pasta water as needed for desired consistency.
  • Garnish with parsley and extra chili oil before serving.

Notes

Adjust chili oil for more or less heat. Add sautéed shrimp, chicken, or roasted veggies for a complete meal. For a vegan option, use coconut cream and plant-based parmesan.
