Step 1: Prep & Season the Salmon
Pat the salmon fillets dry using a paper towel—this helps achieve a nice sear.
Season both sides with salt, black pepper, and paprika for a lightly spiced, savory crust.
Step 2: Sear the Salmon
Heat 1 tbsp olive oil in a large skillet over medium-high heat.
Once the oil is hot, add the salmon fillets, flesh side down. Sear for 3-4 minutes until golden brown.
Flip the salmon and cook for another 2-3 minutes on the other side. Remove from the skillet and set aside.
Step 3: Make the Creamy Sauce
In the same skillet, reduce the heat to medium and add 1 tbsp butter.
Once melted, toss in minced garlic and sauté for 30 seconds until fragrant.
Add fresh spinach and cook for 1-2 minutes, stirring occasionally, until wilted.
Stir in the roasted red peppers and cook for another minute.
Step 4: Build the Creamy Base
Pour in the heavy cream and stir well. Let it simmer for 2-3 minutes to thicken slightly.
Stir in the grated Parmesan cheese, allowing it to melt into the sauce.
If using, add a pinch of red pepper flakes for a mild kick.
Season with salt and pepper to taste.
Step 5: Combine Everything
Return the seared salmon to the skillet, nestling it into the creamy sauce.
Spoon some sauce over the fillets, ensuring they’re coated in the rich, flavorful mixture.
Let everything simmer for another 3-4 minutes, allowing the salmon to soak up the flavors.
