Creamy Spinach & Roasted Red Pepper Sauce

  • 1 tbsp butter – For sautéing
  • 3 cloves garlic minced – Provides rich, aromatic depth
  • 2 cups fresh spinach – Wilts beautifully into the sauce
  • ½ cup roasted red peppers sliced – Adds sweetness and slight smokiness
  • 1 cup heavy cream – Forms the velvety sauce base
  • ½ cup grated Parmesan cheese – Brings a sharp savory balance
  • ½ tsp red pepper flakes optional – For a touch of heat
  • Salt & pepper to taste – To enhance all the flavors

Instructions
 

  • Step 1: Prep & Season the Salmon
  • Pat the salmon fillets dry using a paper towel—this helps achieve a nice sear.
  • Season both sides with salt, black pepper, and paprika for a lightly spiced, savory crust.
  • Step 2: Sear the Salmon
  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  • Once the oil is hot, add the salmon fillets, flesh side down. Sear for 3-4 minutes until golden brown.
  • Flip the salmon and cook for another 2-3 minutes on the other side. Remove from the skillet and set aside.
  • Step 3: Make the Creamy Sauce
  • In the same skillet, reduce the heat to medium and add 1 tbsp butter.
  • Once melted, toss in minced garlic and sauté for 30 seconds until fragrant.
  • Add fresh spinach and cook for 1-2 minutes, stirring occasionally, until wilted.
  • Stir in the roasted red peppers and cook for another minute.
  • Step 4: Build the Creamy Base
  • Pour in the heavy cream and stir well. Let it simmer for 2-3 minutes to thicken slightly.
  • Stir in the grated Parmesan cheese, allowing it to melt into the sauce.
  • If using, add a pinch of red pepper flakes for a mild kick.
  • Season with salt and pepper to taste.
  • Step 5: Combine Everything
  • Return the seared salmon to the skillet, nestling it into the creamy sauce.
  • Spoon some sauce over the fillets, ensuring they’re coated in the rich, flavorful mixture.
  • Let everything simmer for another 3-4 minutes, allowing the salmon to soak up the flavors.
