These golden, crispy potatoes are coated with a savory garlic-parmesan crust that delivers flavor in every crunchy bite. Perfect as a side dish or party appetizer, they’re easy to make and guaranteed to impress. Irresistibly crisp on the outside, soft and fluffy inside!

- 1½ lbs baby potatoes halved
- 3 tbsp olive oil
- ½ cup grated Parmesan cheese
- 2 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- Salt and black pepper to taste
- 1 tbsp chopped fresh parsley optional
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
Mix Parmesan, garlic powder, onion powder, paprika, salt, and pepper in a bowl.
Drizzle olive oil over cut side of potatoes and press them into the cheese mixture.
Place potatoes cut-side down on the baking sheet.
Bake for 30–35 minutes until golden and crispy.
Cool for 5 minutes before removing from tray to keep crust intact.
Sprinkle with chopped parsley before serving if desired.
Use parchment paper to prevent sticking. You can substitute shredded Parmesan but grated works best for a crispy crust. Serve with sour cream or ranch for dipping.
