- 1 medium head cauliflower cut into florets
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- ¾ teaspoon kosher salt
- ½ teaspoon black pepper
- 3 cloves garlic minced
- 1 ounce finely shredded Parmesan cheese
- 1 tablespoon chopped fresh parsley
Preheat oven to 425°F (220°C) with a lined baking sheet inside.
Toss cauliflower florets with olive oil, Italian seasoning, salt, and pepper in a large bowl.
Spread the seasoned cauliflower on the hot baking sheet in a single layer.
Roast for 20-25 minutes until golden and easily pierced with a fork.
Remove from oven, add garlic and Parmesan; stir to coat.
Spread the cauliflower out again and roast 5 minutes more until cheese melts and becomes crispy.
Sprinkle with fresh parsley and serve warm.
For extra crispness, avoid overcrowding the pan. Freshly minced garlic adds robust flavor; garlic powder can be a backup. Parsley is optional but brightens the dish
