Ingredients
  

  • 1 medium head cauliflower cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 3 cloves garlic minced
  • 1 ounce finely shredded Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Instructions
 

  • Preheat oven to 425°F (220°C) with a lined baking sheet inside.
  • Toss cauliflower florets with olive oil, Italian seasoning, salt, and pepper in a large bowl.
  • Spread the seasoned cauliflower on the hot baking sheet in a single layer.
  • Roast for 20-25 minutes until golden and easily pierced with a fork.
  • Remove from oven, add garlic and Parmesan; stir to coat.
  • Spread the cauliflower out again and roast 5 minutes more until cheese melts and becomes crispy.
  • Sprinkle with fresh parsley and serve warm.

Notes

For extra crispness, avoid overcrowding the pan. Freshly minced garlic adds robust flavor; garlic powder can be a backup. Parsley is optional but brightens the dish
