- 1 cup chopped dates
- 1 cup boiling water
- 1 tsp baking soda
- ½ cup unsalted butter softened
- ¾ cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp orange zest
- ½ cup fresh orange juice
- 1 ¾ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ½ cup chopped almonds
Preheat oven to 350°F (175°C) and grease a loaf pan.
Place dates in a bowl, cover with boiling water, stir in baking soda, and let sit for 10 minutes.
In a large bowl, cream butter and sugar until fluffy.
Add eggs, vanilla, orange zest, and orange juice, mixing well.
Fold in soaked dates (with liquid).
In a separate bowl, whisk flour, baking powder, and salt.
Gradually fold dry ingredients into wet mixture.
Stir in chopped almonds.
Pour batter into prepared loaf pan and smooth the top.
Bake for 50 minutes or until a toothpick comes out clean.
Cool in pan for 10 minutes, then transfer to a wire rack.
- You can replace almonds with walnuts or pecans for variation.
- Store in an airtight container for up to 3 days or refrigerate for longer freshness.
- Tastes amazing when slightly warmed with a little butter.
