Ingredients
  

  • 1 cup chopped dates
  • 1 cup boiling water
  • 1 tsp baking soda
  • ½ cup unsalted butter softened
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp orange zest
  • ½ cup fresh orange juice
  • 1 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup chopped almonds

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a loaf pan.
  • Place dates in a bowl, cover with boiling water, stir in baking soda, and let sit for 10 minutes.
  • In a large bowl, cream butter and sugar until fluffy.
  • Add eggs, vanilla, orange zest, and orange juice, mixing well.
  • Fold in soaked dates (with liquid).
  • In a separate bowl, whisk flour, baking powder, and salt.
  • Gradually fold dry ingredients into wet mixture.
  • Stir in chopped almonds.
  • Pour batter into prepared loaf pan and smooth the top.
  • Bake for 50 minutes or until a toothpick comes out clean.
  • Cool in pan for 10 minutes, then transfer to a wire rack.

Notes

  • You can replace almonds with walnuts or pecans for variation.
  • Store in an airtight container for up to 3 days or refrigerate for longer freshness.
  • Tastes amazing when slightly warmed with a little butter.
