Ingredients
  

  • 4 salmon fillets 4-6 oz each, skinless or skin-on
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 3 cloves garlic finely minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley chopped
  • ½ tsp dried oregano
  • Salt and black pepper to taste
  • Optional: 1/4 tsp red pepper flakes 1 tbsp dry white wine

Instructions
 

  • Pat salmon dry; season with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Sear salmon, presentation side down, for 3-4 minutes until golden.
  • Flip salmon; reduce heat to medium. Add butter and garlic.
  • Baste salmon with butter for 2-3 minutes until 135°F internally.
  • Remove from heat; add lemon juice, zest, oregano, and parsley.
  • Spoon sauce over salmon; serve with lemon wedges.

Notes

  • Store leftovers in fridge for 2 days; reheat gently.
  • Use ghee for dairy-free or dill for a flavor twist.
  • Cook to 135°F to avoid overcooking.
  • Sear skin-side down first for crispy skin.
  • Serve with roasted asparagus or quinoa.
