- 4 salmon fillets 4-6 oz each, skinless or skin-on
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 3 cloves garlic finely minced
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh parsley chopped
- ½ tsp dried oregano
- Salt and black pepper to taste
- Optional: 1/4 tsp red pepper flakes 1 tbsp dry white wine
Pat salmon dry; season with salt and pepper.
Heat olive oil in a skillet over medium-high heat.
Sear salmon, presentation side down, for 3-4 minutes until golden.
Flip salmon; reduce heat to medium. Add butter and garlic.
Baste salmon with butter for 2-3 minutes until 135°F internally.
Remove from heat; add lemon juice, zest, oregano, and parsley.
Spoon sauce over salmon; serve with lemon wedges.
- Store leftovers in fridge for 2 days; reheat gently.
- Use ghee for dairy-free or dill for a flavor twist.
- Cook to 135°F to avoid overcooking.
- Sear skin-side down first for crispy skin.
- Serve with roasted asparagus or quinoa.
