- 1 ½ cups chicken or vegetable broth
- ¼ cup unsalted butter
- 6 ounces stove-top stuffing mix
- 2 10.75 oz cans cream of chicken soup
- 1 cup sour cream
- 3 cups cooked shredded chicken (rotisserie or cooked breast)
- 1 ½ cups frozen mixed vegetables
Preheat oven to 350°F (175°C) and grease a 9x13-inch casserole dish.
Heat broth and butter in a saucepan until butter melts. Remove from heat, stir in stuffing mix, cover, and set aside.
In a large bowl, mix cream of chicken soup and sour cream until smooth.
Stir in shredded chicken and frozen vegetables evenly.
Spread the chicken mixture in the prepared casserole dish.
Spoon the stuffing evenly over the chicken mixture.
Bake for 30-35 minutes until the stuffing is golden and casserole is heated through.
Let cool a few minutes before serving.
