Ingredients
  

  • 1 ½ cups chicken or vegetable broth
  • ¼ cup unsalted butter
  • 6 ounces stove-top stuffing mix
  • 2 10.75 oz cans cream of chicken soup
  • 1 cup sour cream
  • 3 cups cooked shredded chicken (rotisserie or cooked breast)
  • 1 ½ cups frozen mixed vegetables

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9x13-inch casserole dish.
  • Heat broth and butter in a saucepan until butter melts. Remove from heat, stir in stuffing mix, cover, and set aside.
  • In a large bowl, mix cream of chicken soup and sour cream until smooth.
  • Stir in shredded chicken and frozen vegetables evenly.
  • Spread the chicken mixture in the prepared casserole dish.
  • Spoon the stuffing evenly over the chicken mixture.
  • Bake for 30-35 minutes until the stuffing is golden and casserole is heated through.
  • Let cool a few minutes before serving.

Notes

  • Use rotisserie chicken to save prep time.
  • This casserole freezes well—prepare in advance and bake later.
  • Feel free to swap frozen veggies to your preference.
  • Adjust salt according to broth and soup saltiness.
