Ingredients
  

  • 1 lb 450g lean ground beef
  • 1 lb 450g Yukon gold potatoes, diced into 1/2-inch cubes
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes optional, for heat
  • ½ cup 120ml beef broth
  • 2 tbsp fresh parsley chopped (for garnish)

Instructions
 

  • Heat olive oil in a large skillet over medium heat; add onion and garlic; sauté 2-3 min until soft.
  • Add ground beef; cook 5-7 min until browned, breaking it up; drain excess fat.
  • Stir in potatoes, paprika, oregano, salt, pepper, and red pepper flakes; mix well.
  • Pour in beef broth; cover and simmer 10-12 min until potatoes are tender, stirring occasionally.
  • Uncover; cook 2-3 min to reduce liquid; garnish with parsley; serve hot.

Notes

  • Use Yukon gold or red potatoes for tender texture; russets work but may crumble.
  • Swap ground beef with turkey or chicken for leaner option; adjust seasoning.
  • Add diced bell peppers or carrots with potatoes for extra veggies.
  • Ensure broth is gluten-free for dietary compliance; check labels.
