- 1 lb 450g lean ground beef
- 1 lb 450g Yukon gold potatoes, diced into 1/2-inch cubes
- 1 small yellow onion diced
- 2 cloves garlic minced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes optional, for heat
- ½ cup 120ml beef broth
- 2 tbsp fresh parsley chopped (for garnish)
Heat olive oil in a large skillet over medium heat; add onion and garlic; sauté 2-3 min until soft.
Add ground beef; cook 5-7 min until browned, breaking it up; drain excess fat.
Stir in potatoes, paprika, oregano, salt, pepper, and red pepper flakes; mix well.
Pour in beef broth; cover and simmer 10-12 min until potatoes are tender, stirring occasionally.
Uncover; cook 2-3 min to reduce liquid; garnish with parsley; serve hot.
