Easy S’mores Cookies: Gooey, Chocolatey Campfire Treat Recipe

These S’mores Cookies combine the gooeyness of toasted marshmallows, the crunch of graham crackers, and melty chocolate chips in a soft, chewy cookie. Perfect for capturing that classic campfire s’mores flavor in cookie form.

Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cornstarch
  • 10 tablespoons unsalted butter room temperature
  • ¼ cup granulated sugar
  • ½ cup light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup mini marshmallows or marshmallow bits, divided
  • 1 bar Hershey’s chocolate 1.55 oz, chopped
  • 4 graham crackers roughly chopped

Instructions
 

  • Roughly chop graham crackers, Hershey’s chocolate, and halve mini marshmallows.
  • Whisk together flour, baking powder, baking soda, cornstarch, and salt.
  • Cream butter and sugars until creamy. Add egg and vanilla and mix well.
  • Gradually add dry ingredients until just combined.
  • Reserve some marshmallows, then mix remaining marshmallows, chocolate chips, and graham crackers into dough.
  • Chill dough for at least 1 hour.
  • Preheat oven to 350°F (175°C). Roll dough into 2-tablespoon balls and place on lined baking sheet, spacing 2 inches apart.
  • Bake for 8 minutes, then top cookies with reserved marshmallows and chocolate pieces and bake for 2-3 more minutes.
  • Cool completely on baking sheet.

Notes

Halving mini marshmallows prevents extreme puffing and keeps cookies pretty. Chill dough for best shape and texture.
