Ingredients
  

  • 1 lb ground beef
  • 1 small onion chopped
  • 1 packet taco seasoning
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz corn, undrained
  • 1 can 15 oz diced tomatoes with green chilies
  • 1 can 8 oz tomato sauce
  • cups beef broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese sour cream, avocado, tortilla chips

Instructions
 

  • Brown ground beef with chopped onion in a large pot over medium heat.
  • Drain excess fat, then stir in taco seasoning.
  • Add beans, corn, diced tomatoes, tomato sauce, and beef broth.
  • Stir everything together and bring to a boil.
  • Reduce heat and simmer uncovered for 15–20 minutes.
  • Season with salt and pepper if needed.
  • Ladle into bowls and top with your favorite taco toppings.

Notes

Swap ground beef with ground turkey or chicken for a lighter version.
Make it spicy by adding jalapeños or extra chili powder.
Freezes well for up to 3 months—great for meal prep.
