Ingredients
  

  • 2 chicken breasts boneless and skinless
  • 2 cups cooked jasmine or basmati rice
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste
  • 1 cup shredded carrots
  • 1 cup cucumber slices
  • ½ cup pickled red onions
  • ¼ cup chopped green onions
  • ½ avocado sliced
  • Optional: sesame seeds sriracha, lime wedges

Instructions
 

  • Slice chicken into strips and season with garlic powder, onion powder, paprika, salt, and pepper.
  • Heat olive oil in a skillet and cook chicken until golden and fully cooked, about 5–7 mins per side.
  • Add soy sauce and honey to the pan, stir to coat chicken, and cook 1 more minute.
  • Warm rice and divide evenly into 4 bowls.
  • Top each bowl with cooked chicken, carrots, cucumbers, pickled onions, green onions, and avocado.
  • Sprinkle with sesame seeds and drizzle with sriracha or lime juice if desired.
  • Serve warm or at room temperature for a quick, healthy meal.

Notes

Use brown rice, quinoa, or cauliflower rice for variation.
Add a fried egg on top for extra protein and flavor.
Great for meal prep—store components separately and assemble when ready.
