French Onion Beef and Noodles
This dish is a creamy, comforting one-pot meal featuring tender beef stew meat simmered in a savory French onion soup and beef broth sauce, combined with egg noodles and finished with sour cream, Parmesan cheese, and crispy fried onions. It’s hearty and flavorful, perfect as a cozy dinner.
Ingredients
- 2 tablespoons olive oil
- 1 pound beef stew meat
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 can 10.5 oz French onion soup
- 2 to 3 cups beef broth
- 12 ounces egg noodles
- ½ cup sour cream
- ¼ cup Parmesan cheese
- 1 cup French fried onions for topping
- Optional: minced garlic 1 tsp, chopped fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add beef stew meat seasoned with onion powder, garlic powder, salt, and pepper; sear until browned on all sides (3-5 minutes).
- Pour in French onion soup and beef broth; bring to a simmer and cook for about 10 minutes to tenderize beef.
- Add uncooked egg noodles to the pot; gently stir and press noodles into the broth so they cook evenly.
- Cover, reduce heat to low, and cook noodles until tender, about 7-10 minutes, stirring occasionally.
- Remove from heat, stir in sour cream and Parmesan cheese until creamy and well combined.
- Serve topped with crispy French fried onions and optionally garnish with fresh parsley.
Notes
- Stir noodles occasionally to prevent sticking and ensure even cooking.
- Use French onion soup from the can or homemade, as preferred.
- French fried onions add a delightful crunch on top just before serving.
- Leftovers reheat well, but add fried onions fresh each time for best texture.
