- 3 ripe peaches diced
- 1 small red onion finely chopped
- 1 jalapeño seeded and minced
- ½ cup fresh cilantro chopped
- Juice of 1 lime
- Salt to taste
In a bowl, combine diced peaches, red onion, jalapeño, and cilantro.
Squeeze lime juice over mixture and stir well.
Season with salt to taste.
Chill for at least 30 minutes before serving to let flavors meld.
