Ingredients
  

  • 3 ripe peaches diced
  • 1 small red onion finely chopped
  • 1 jalapeño seeded and minced
  • ½ cup fresh cilantro chopped
  • Juice of 1 lime
  • Salt to taste

Instructions
 

  • In a bowl, combine diced peaches, red onion, jalapeño, and cilantro.
  • Squeeze lime juice over mixture and stir well.
  • Season with salt to taste.
  • Chill for at least 30 minutes before serving to let flavors meld.

Notes

For extra zing, add a splash of apple cider vinegar or a teaspoon of honey for sweetness.
