- 4 bone-in chicken thighs
- 4 medium potatoes cut into wedges
- 3 tbsp olive oil
- 4 cloves garlic minced
- ½ cup grated Parmesan cheese
- 1 tsp dried Italian herbs
- ½ tsp paprika
- Salt and pepper to taste
- Fresh parsley chopped (for garnish)
Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
Place chicken thighs and potato wedges on the sheet.
In a small bowl, mix olive oil, garlic, Parmesan, Italian herbs, paprika, salt, and pepper.
Brush or toss the chicken and potatoes with the mixture until evenly coated.
Bake for 40 minutes or until chicken reaches 165°F (74°C) and potatoes are golden and tender.
Garnish with chopped parsley and serve hot.
You can substitute chicken thighs with breasts but adjust cooking time. Use baby potatoes for quicker prep. Add a squeeze of lemon before serving for brightness.
