Ingredients
  

  • 4 bone-in chicken thighs
  • 4 medium potatoes cut into wedges
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • ½ cup grated Parmesan cheese
  • 1 tsp dried Italian herbs
  • ½ tsp paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  • Place chicken thighs and potato wedges on the sheet.
  • In a small bowl, mix olive oil, garlic, Parmesan, Italian herbs, paprika, salt, and pepper.
  • Brush or toss the chicken and potatoes with the mixture until evenly coated.
  • Bake for 40 minutes or until chicken reaches 165°F (74°C) and potatoes are golden and tender.
  • Garnish with chopped parsley and serve hot.

Notes

You can substitute chicken thighs with breasts but adjust cooking time. Use baby potatoes for quicker prep. Add a squeeze of lemon before serving for brightness.
