These grilled cheese skewers are a delicious and fun way to enjoy melty, smoky cheese. Perfect as an appetizer or side at BBQs and gatherings, these skewers offer a crispy char on the outside with gooey cheese inside. Simple to prepare and sure to impress.

Ingredients
  

  • 20 ounces Queso Fresco or Halloumi cheese cut into 1-inch wide strips
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 6 metal or wooden skewers if wooden, soaked in water for 30 minutes

Instructions
 

  • Preheat grill to medium heat.
  • Thread cheese strips onto skewers.
  • Brush cheese skewers with olive oil and season with salt and pepper if desired, but grilling cheeses are often salty enough.
  • Place skewers on grill and cook for about 2-3 minutes per side until all sides are golden brown and slightly crisp. Turn carefully to avoid breaking.
  • Remove from grill and serve immediately as is or with dips such as chimichurri, hot sauce, or honey drizzle.

Notes

  • Soaking wooden skewers prevents burning on the grill.
  • Use sturdy grilling cheese that melts but holds shape like Queso Fresco or Halloumi.
  • You can add vegetables on the skewers, such as bell peppers or cherry tomatoes, for variation.
  • Serve alongside grilled meats or as a standalone appetizer.
