- 20 ounces Queso Fresco or Halloumi cheese cut into 1-inch wide strips
- 2 tablespoons olive oil
- Salt and pepper to taste
- 6 metal or wooden skewers if wooden, soaked in water for 30 minutes
Preheat grill to medium heat.
Thread cheese strips onto skewers.
Brush cheese skewers with olive oil and season with salt and pepper if desired, but grilling cheeses are often salty enough.
Place skewers on grill and cook for about 2-3 minutes per side until all sides are golden brown and slightly crisp. Turn carefully to avoid breaking.
Remove from grill and serve immediately as is or with dips such as chimichurri, hot sauce, or honey drizzle.
- Soaking wooden skewers prevents burning on the grill.
- Use sturdy grilling cheese that melts but holds shape like Queso Fresco or Halloumi.
- You can add vegetables on the skewers, such as bell peppers or cherry tomatoes, for variation.
- Serve alongside grilled meats or as a standalone appetizer.
