A fluffy, moist quick bread with wholesome ingredients—ripe bananas, oat flour, cacao, and a touch of dark chocolate. Packed with fiber and protein, this simple recipe is perfect for breakfast, snacks, or healthy desserts. No refined sugar or oil required!

Ingredients
  

  • 3 medium-large ripe bananas about 300g, mashed
  • 2 large eggs
  • 2 tbsp milk any kind
  • 1 tsp vanilla extract
  • cups 160g oat flour (or 2 cups rolled oats, ground into flour)
  • 2 tbsp cacao or cocoa powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 oz dark chocolate melted
  • 2 tbsp 30g mini chocolate chips, for topping

Instructions
 

  • Preheat oven to 350°F (175°C). Grease or line a bread loaf pan with parchment paper.
  • Mash bananas in a bowl. Add eggs, milk, and vanilla; mix to combine.
  • In another bowl, mix oat flour, cacao powder, baking soda, and salt.
  • Add dry ingredients to banana mixture, mixing just until incorporated.
  • Fold in melted dark chocolate.
  • Pour batter into pan; smooth the top. Sprinkle chocolate chips on top, gently pressing into the batter.
  • Bake 30–35 minutes, or until toothpick inserted comes out clean.
  • Cool, then slice. Store leftovers in an airtight container in the refrigerator.

Notes

  • Optional: Add walnuts or pecans for extra crunch.
  • Use dairy-free milk for a completely dairy-free loaf.
  • For more sweetness, add 2–3 tbsp maple syrup.
  • Enjoy cold or slightly warmed.
