Ingredients
  

  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup coconut sugar or brown sugar
  • cup coconut oil melted
  • ¼ cup honey or maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup dark chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C) and line an 8x8‑inch baking pan with parchment paper.
  • In a large bowl, whisk together oats, flour, baking soda, salt, and sugar.
  • In another bowl, mix melted coconut oil, honey, egg, and vanilla until combined.
  • Add wet ingredients to dry ingredients and stir until just combined.
  • Fold in chocolate chips.
  • Spread batter evenly into prepared pan.
  • Bake for 18‑20 minutes, or until golden brown and set.
  • Let cool completely before cutting into bars.

Notes

  • For vegan version, replace egg with flax egg and use maple syrup.
  • Add chopped nuts or seeds for extra crunch.
  • Store in an airtight container for up to 5 days.
