- 2 cups rolled oats
- 1 cup whole wheat flour
- ½ tsp baking soda
- ½ tsp salt
- ½ cup coconut sugar or brown sugar
- ⅓ cup coconut oil melted
- ¼ cup honey or maple syrup
- 1 large egg
- 1 tsp vanilla extract
- ½ cup dark chocolate chips
Preheat oven to 350°F (175°C) and line an 8x8‑inch baking pan with parchment paper.
In a large bowl, whisk together oats, flour, baking soda, salt, and sugar.
In another bowl, mix melted coconut oil, honey, egg, and vanilla until combined.
Add wet ingredients to dry ingredients and stir until just combined.
Fold in chocolate chips.
Spread batter evenly into prepared pan.
Bake for 18‑20 minutes, or until golden brown and set.
Let cool completely before cutting into bars.
- For vegan version, replace egg with flax egg and use maple syrup.
- Add chopped nuts or seeds for extra crunch.
- Store in an airtight container for up to 5 days.
