- 2 cups rolled oats
- 1 cup whole wheat flour or almond flour
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp cinnamon
- ⅓ cup coconut oil melted or unsalted butter
- ⅓ cup honey or pure maple syrup
- 1 large egg
- 1 tsp vanilla extract
- ½ cup dark chocolate chips
- ¼ cup chopped nuts optional
Preheat oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
In a large bowl, mix oats, flour, baking soda, salt, and cinnamon.
In another bowl, whisk together melted coconut oil, honey, egg, and vanilla.
Combine wet and dry ingredients until well mixed.
Fold in chocolate chips (and nuts if using).
Spread mixture evenly in prepared baking dish.
Bake for 20–25 minutes until golden brown.
Allow to cool completely before slicing into bars.
- Swap honey for maple syrup to make it vegan.
- Add dried fruit for extra flavor and nutrition.
- Store bars in an airtight container for up to 5 days or freeze for longer storage.
