Ingredients
  

  • 1 ½ cups rolled oats
  • ½ cup almond flour
  • 3 tbsp cocoa powder
  • ¼ cup maple syrup or honey
  • 2 tbsp coconut oil melted
  • ½ tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  • In a bowl, mix oats, almond flour, cocoa powder, and salt.
  • In another bowl, whisk together maple syrup, coconut oil, and vanilla.
  • Pour wet mixture into dry ingredients and stir until well combined.
  • Spread evenly on the baking sheet and press down slightly to compact.
  • Bake for 20 minutes, flipping halfway for even crisping.
  • Let cool completely before breaking into small cereal-sized pieces.
  • Store in an airtight jar for up to 2 weeks.

Notes

  • Add mini chocolate chips after baking for extra sweetness.
  • Substitute maple syrup with date syrup for a lower glycemic option.
  • Delicious with milk or yogurt and fresh fruit!
