- 8 oz Mexican melting cheese like Oaxaca or Monterey Jack
- 4 oz cooked chorizo sausage
- ½ cup diced poblano or bell peppers
- ¼ cup diced onions
- 1 clove garlic minced
- 1 tablespoon olive oil
- Fresh cilantro for garnish
- Warm tortillas or tortilla chips
Heat olive oil in a skillet over medium heat.
Add onions, garlic, and peppers; sauté until softened.
Stir in cooked chorizo and cook for 2 minutes.
Add cheese on top and cover until melted, about 5 minutes.
Garnish with fresh cilantro and serve immediately with tortillas or chips.
