- 2 boneless chicken breasts cubed
- 2 c cooked white rice
- ½ c honey BBQ sauce
- 2 tbsp honey
- 1 tbsp olive oil
- ½ tsp smoked paprika
- ¼ tsp salt
- ¼ tsp black pepper
- ½ c diced red bell pepper
- ¼ c chopped green onion
Mix BBQ sauce and honey in a bowl.
Toss chicken cubes with paprika, salt, and pepper.
Heat olive oil in a skillet over medium-high heat.
Add chicken, cook until golden and nearly cooked through.
Add bell pepper, sauté 2min.
Pour in honey BBQ mixture, stir well, cook until chicken is glazed and cooked through.
Serve chicken over warm cooked rice.
Sprinkle with green onions before serving.
