- ¾ cup raisins
- 1 cup water
- 1¾ cups all-purpose flour
- ½ teaspoon baking soda
- 1 teaspoon caraway seed
- ½ cup shortening
- ¾ cup granulated sugar
- 1 large egg
- ½ teaspoon vanilla extract
- For Lemon Glaze
- 1 cup confectioners' sugar
- 2 tablespoons milk
- ½ teaspoon lemon extract
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Boil raisins in water, then simmer until absorbed. Cool.
Mix flour, baking soda, and caraway seed.
Cream shortening and sugar, add egg, vanilla; mix well.
Alternate adding raisins and flour mixture to creamed mixture; dough will be crumbly.
Shape into 1-inch balls, flatten slightly, place on baking sheet.
Bake 12-15 minutes until edges brown lightly. Cool 5 minutes on sheet, then transfer to wire rack.
Mix glaze ingredients; drizzle over cooled cookies.
