Ingredients
  

  • ¾ cup raisins
  • 1 cup water
  • cups all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon caraway seed
  • ½ cup shortening
  • ¾ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • For Lemon Glaze
  • 1 cup confectioners' sugar
  • 2 tablespoons milk
  • ½ teaspoon lemon extract

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Boil raisins in water, then simmer until absorbed. Cool.
  • Mix flour, baking soda, and caraway seed.
  • Cream shortening and sugar, add egg, vanilla; mix well.
  • Alternate adding raisins and flour mixture to creamed mixture; dough will be crumbly.
  • Shape into 1-inch balls, flatten slightly, place on baking sheet.
  • Bake 12-15 minutes until edges brown lightly. Cool 5 minutes on sheet, then transfer to wire rack.
  • Mix glaze ingredients; drizzle over cooled cookies.

Notes

  • You can substitute butter for shortening for richer flavor.
  • Make sure dough balls are flattened slightly to bake evenly.
  • The lemon glaze adds sweetness and a citrus punch complementing the caraway and raisins.
