- 3 large eggs
- 1 cup granulated sugar
- ½ cup vegetable oil
- ½ cup milk
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- 1 cup whipped cream
- 1 cup mixed berries strawberries, blueberries, raspberries
- ¼ cup berry jam or glaze for topping
- Powdered sugar for dusting
Preheat oven to 350°F (175°C); grease and line an 8-inch round pan.
Whisk eggs and sugar until pale and fluffy.
Add oil, milk, and vanilla; mix well.
Sift in flour, baking powder, and salt; fold gently.
Pour batter into the pan and bake for 25 mins or until golden and springy.
Cool completely; slice cake into two even layers.
Spread whipped cream and berries between layers.
Top with jam glaze and dust with powdered sugar.
Chill before serving for best flavor and structure.
