Ingredients
  

  • 3 large eggs
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • ½ cup milk
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup whipped cream
  • 1 cup mixed berries strawberries, blueberries, raspberries
  • ¼ cup berry jam or glaze for topping
  • Powdered sugar for dusting

Instructions
 

  • Preheat oven to 350°F (175°C); grease and line an 8-inch round pan.
  • Whisk eggs and sugar until pale and fluffy.
  • Add oil, milk, and vanilla; mix well.
  • Sift in flour, baking powder, and salt; fold gently.
  • Pour batter into the pan and bake for 25 mins or until golden and springy.
  • Cool completely; slice cake into two even layers.
  • Spread whipped cream and berries between layers.
  • Top with jam glaze and dust with powdered sugar.
  • Chill before serving for best flavor and structure.

Notes

  • Use room-temperature ingredients for best results.
  • You can substitute berries with any seasonal fruit.
