- 2 cups leftover mashed potatoes room temperature
- 3 large eggs beaten
- 1 cup shredded Monterey Jack or cheddar cheese divided
- ¼ cup finely chopped fresh chives plus extra for garnish
- Salt and pepper to taste
- Sour cream for serving optional
Preheat oven to 400°F (200°C). Lightly grease a 24-cup mini muffin tin.
In a large bowl, mix mashed potatoes, eggs, ¾ cup of the shredded cheese, and chopped chives until well combined. Season with salt and pepper.
Use a small scoop or spoon to fill each muffin cup nearly full with the potato mixture.
Sprinkle the remaining ¼ cup cheese on top of each puff.
Bake 15-20 minutes until puffs are golden brown and set.
Let cool 5 minutes, then gently remove puffs from the tin with a knife or spatula.
