- 2 ¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter softened
- 1 ½ cups granulated sugar
- 1 egg
- ½ tsp vanilla extract
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- Extra sugar for rolling
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a bowl, whisk together flour, baking soda, baking powder, and salt.
In another bowl, beat butter and sugar until light and fluffy.
Add egg, vanilla, lemon juice, and zest to the butter mixture; beat until combined.
Gradually add dry ingredients to the wet mixture and mix until dough forms.
Scoop dough into 1-inch balls and roll in sugar.
Place balls 2 inches apart on baking sheet.
Bake for 9–11 minutes or until edges are lightly golden.
Cool on pan for 2 mins, then transfer to wire rack.
- For extra lemon flavor, add a few drops of lemon extract.
- Store in an airtight container for up to 5 days.
- You can freeze dough balls for up to 3 months.
