Luscious Lemon-Lime Cherry Pistachio Recipe

Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ½ cup ground pistachios
  • cup melted butter
  • 2 tbsp suga

Filling:

  • 3 8 oz packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 2 tbsp all-purpose flour
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • Zest of 1 lime
  • 2 tbsp lemon juice
  • 2 tbsp lime juice
  • ½ cup chopped maraschino cherries
  • ¼ cup chopped pistachios

Topping:

  • ½ cup whipped cream
  • Chopped pistachios and cherries for garnish

Instructions
 

  • Preheat oven to 325°F (163°C).
  • Mix graham crumbs, ground pistachios, sugar, and melted butter; press into springform pan.
  • Bake crust for 10 minutes; cool slightly.
  • Beat cream cheese and sugar until smooth.
  • Add eggs one at a time, mixing well.
  • Mix in flour, sour cream, vanilla, lemon and lime zest and juice.
  • Fold in cherries and pistachios gently.
  • Pour mixture over crust and bake for 55–60 minutes or until center is just set.
  • Cool completely, then refrigerate for 4 hours or overnight.
  • Top with whipped cream, pistachios, and cherries before serving.

Notes

  • Use room-temperature ingredients for a smooth texture.
  • Don't overmix after adding eggs to avoid cracks.
  • Chill well for clean slices.
