- 1 ½ cups graham cracker crumbs
- ½ cup ground pistachios
- ⅓ cup melted butter
- 2 tbsp suga
Filling:
- 3 8 oz packages cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 2 tbsp all-purpose flour
- ½ cup sour cream
- 1 tsp vanilla extract
- Zest of 1 lemon
- Zest of 1 lime
- 2 tbsp lemon juice
- 2 tbsp lime juice
- ½ cup chopped maraschino cherries
- ¼ cup chopped pistachios
Topping:
- ½ cup whipped cream
- Chopped pistachios and cherries for garnish
Preheat oven to 325°F (163°C).
Mix graham crumbs, ground pistachios, sugar, and melted butter; press into springform pan.
Bake crust for 10 minutes; cool slightly.
Beat cream cheese and sugar until smooth.
Add eggs one at a time, mixing well.
Mix in flour, sour cream, vanilla, lemon and lime zest and juice.
Fold in cherries and pistachios gently.
Pour mixture over crust and bake for 55–60 minutes or until center is just set.
Cool completely, then refrigerate for 4 hours or overnight.
Top with whipped cream, pistachios, and cherries before serving.

- Don't overmix after adding eggs to avoid cracks.
