Ingredients
  

  • 2 cups mashed potatoes cooled
  • 1 cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 1 egg
  • 2 tbsp chopped chives or green onions
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • ¼ cup breadcrumbs plus more for coating
  • Oil spray or melted butter for brushing

Instructions
 

  • Preheat oven to 400°F (200°C) or air fryer to 375°F (190°C).
  • In a bowl, mix mashed potatoes, cheeses, egg, chives, garlic powder, salt, and pepper.
  • Add breadcrumbs and mix until a soft dough forms.
  • Shape into small balls or mounds and roll in extra breadcrumbs.
  • Place on a greased or lined baking sheet or air fryer basket.
  • Lightly brush or spray with oil.
  • Bake or air fry for 15–20 minutes until golden and crisp.
  • Serve hot with sour cream, ketchup, or your favorite dip.

Notes

  • Use cold, firm mashed potatoes for best results.
  • Add cooked bacon bits for extra flavor.
  • Make ahead and reheat in the oven or air fryer for serving.
